My husband's pistachio encrusted salmon was moist and flavorful. The roasted vegetables accompaniment (turnip, beets, sweet onion) were a perfect balance creating layers of endless clean but rich flavors. For my entree I had a perfectly seared fish accompanied by a baby squash blossom stuffed with local crabmeat, drizzled with a red wine syrup. What a perfect blend of flavor and texture. We also had the best sliced tuna with wasabi slaw and crispy wontons. We started with a perfect arugula salad with local grilled asparagus.

His lovely wife, Katherine manager, Roger, made us feel so welcome, along with the fantastic waiter who recited several specials impeccably with mention of every local ingredient. Chuck Arnold is the most talented, creative chef with a great staff to carry out his passion and knowledge. I am a successful restauranteur and chef (30 years and consistently # 1 or 2 on Trip Advisor) so I like to think I am a pretty good judge. My husband and i had dinner at Fire and Wine and I haven't stopped thinking about how perfect it was. We finished it all off with the chocolate mousse desert, which is also made in house, and disgustingly amazing!!!!! Overall, we were licking our plates and now understand why it is so hard to get a reservation here! This place is BY FAR the best restaurant in Vero, for a portion of the price of Tides. We shared a bottle of Zinfandel, which was lovely as well. The swordfish was a healthy portion, and was soooo juicy and moist - cooked PERFECTLY. My dad and I ordered the swordfish steak special, with a ricotta, mushroom and corn rollatini, in an orange broth, topped with asparagus. The tuna was buttery and melt in your mouth delicious!! The whole plate was shared by 3. They brought out beautiful baby rosemary rolls, which we great!! We started with the appetizer special, which was a ahi tuna sashimi, wonton, wasabi slaw dish. We all ordered the specials of the night, with the exception of my mom, she had steak dish which I can not remember but she loved. THE FOOD WAS TO DIE FOR! I MEAN LAST MEAL GOOD! I would say the quality and taste would fall on top 5 of all of the meals I have ever eaten in my life. Needless to say the ambiance, vibe and service provided by this restaurant was stupendous! But then there is the food. We were taken care of by Hunter, who was beyond amazing!! He was able to make great recommendations, answered all of our many questions, and made us feel at home. Upon arriving, we were greeted kindly and brought to our table. We happened to get a reservation day of, but this is not typically doable, so I suggest calling in advance. My parents live down the road from this restaurant, and my dad wanted to go for his birthday.
